Sugar-and-Spice Nuts

SERVINGS: MAKES 5 CUPS

3/4 cup sugar
1 tablespoon kosher salt
1 tablespoon chile powder
2 teaspoons cinnamon
2 teaspoons cayenne pepper
1 large egg white
2 cups raw cashews (9 ounces)
2 cups raw almonds (9 ounces)

Preheat the oven to 300°. Coat a rimmed baking sheet with nonstick cooking spray. In a small bowl, whisk the sugar with the salt, chile powder, cinnamon and cayenne pepper. In a large bowl, beat the egg white until frothy. Add the cashews, almonds and spiced sugar and toss. Spread out the nuts on the prepared baking sheet and bake for about 45 minutes, stirring once, until browned. Let the nuts cool on the baking sheet, stirring occasionally.

Whiskey-Glazed Sweet Potatoes

4 large sweet potatoes (about 3 pounds)
1 cup pecans
4 tablespoons unsalted butter, plus more for the dish
1/2 cup agave nectar (preferably amber)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/4 cup whiskey
Kosher salt
3 crisp apples (such as McIntosh or Cortland), peeled, halved, cored and cut into 1/2-inch-thick slices

Directions
Preheat the oven to 375 degrees F. Place the sweet potatoes on a baking sheet (do not pierce) and bake 30 to 40 minutes. Lightly squeeze the potatoes: If they're slightly soft, they're done. Let cool.

Lightly toast the pecans in a medium saute pan over high heat, shaking the pan occasionally, about 3 minutes. Add the butter, then reduce the heat to medium and stir in the agave, cinnamon, nutmeg and cayenne; let simmer 4 to 5 minutes. Add the whiskey and 1/2 teaspoon salt; simmer 5 more minutes.

Butter the bottom and sides of an 8-inch-square baking dish. Remove the peel from the sweet potatoes and cut crosswise into 1/2-inch-thick slices. Arrange the sweet potato and apple slices in the prepared pan, alternating. Pour the whiskey-pecan mixture over the top. Cover with aluminum foil and bake 15 minutes. Remove the foil and baste the top with the whiskey sauce that's collected in the bottom of the pan; continue baking until the apples are soft and glazed, about 18 more minutes.

The Key to Tax Compliance Lies in Nexus

When it comes to tax compliance, nexus is the key to everything you do.

Nexus is defined as the obligation to collect and remit tax where business is conducted. However, there is a range of ways nexus is created, the rules vary state by state, and many companies aren't even aware of all of the possible triggers because they're constantly changing as sales tax legislation continues to evolve.

Many businesses assume they are only required to collect and file sales and use tax and manage exemption certificates in the state where their business is located. Unfortunately, that assumption usually results in hefty penalties in an audit.

To begin, almost every business has to calculate, collect, report and remit some kind of transaction tax, whether it be sales tax, seller’s use tax, exemption certificates... More than likely, you are already paying taxes in your state and local jurisdictions as a result of business location. However, what happens when you sell something across state lines? Are you required to collect sales tax and how much? And to whom do you remit the tax? Nexus rules are established by individual states and every state defines them uniquely. Determining exactly how a rule applies to a business is critical.

Making the nexus determination on your own is difficult, confusing and can lead to problems further down the road. Once you have determined where Nexus exists for your business, you are required to calculate, collect, report and remit that state’s sales tax each and every time you make a transaction.

Tomato and Watermelon Salad

2 tablespoons balsamic vinegar
1 tablespoon fresh lemon juice
1/2 cup extra-virgin olive oil
2 beefsteak (or other large variety) tomatoes, stemmed, washed and dried
1 pint cherry tomatoes, stemmed, washed and dried
1 tablespoon chopped tarragon leaves
4 strawberries, hulled, washed and cut into very small pieces
Sea salt
Freshly ground black pepper
1 to 2 teaspoons superfine (or granulated) sugar
6 ounces cold watermelon, rind removed, seeded and cut into bite-size cubes

In a bowl, whisk together the balsamic, lemon juice, and olive oil. Taste for seasoning. Set aside.

Place the tomatoes on a flat surface. Cut the smaller ones in half and the larger ones into slices. Arrange all of them in a single layer, flesh side up. Season them with salt, black pepper and sugar. Drizzle the tomatoes with the dressing. Toss them with the tarragon and strawberries.

Arrange the tomatoes down the length of 6 rectangular plates. Drizzle with the remaining dressing and top with the watermelon. Serve immediately.

Risk of Basing Sales Tax Rates on Zip Codes

Using a zip code based tool to determine a sales tax rate may work, but then again it may not. Take for example a recent announcement by the Ohio Department of Taxation providing an updated list of sales tax rates by Ohio post offices and zip codes, effective April 1, 2014.Relying on these zip codes alone could lead to over- and undercharging sales tax.

Why is that? It turns out this list includes the caveat that: “Some Ohio municipalities do not appear on this listing because they are not large enough to have their own post offices.” In addition, some Ohio municipalities include more than one jurisdiction. For example, “Small portions of Delaware, Fairfield, Licking and Union counties asses a transit authority sales tax that may not be accurately reflected in the rates by post office.”



Charging the wrong sales tax rate could lead to more than just a customer service issue. Sales tax compliance is like the game of Operation: if you’re not very precise, you can set off alarms. Sales Tax Changes in the New Year

2014 is here, and so are quite a few sales tax changes. Connecticut even has a few to offer, including new online filing requirements, and a revocation of Special Notice 92(19) that may impact use tax for mail order sellers. And what about the Marketplace Fairness Act of 2013 (MFA)? The MFA was a bill passed by the Senate in 2013 that could give states the authority to make remote businesses collect sales tax, including those who conduct business over the internet, via phone or mail order catalog. While the MFA has languished in the House, remote sales are exploding and the rise of online shopping has cut into state and local sales tax revenue. As a result, many states are looking for ways to impose sales and use tax collection requirements on out-of-state retailers.

While the impact of Connecticut’s revocation of Special Notice 92(19) remains to be seen, and it is hard to guess what changes may be in store for later in 2014, it is wise to be prepared.
